How to make cupcakes: tasty, colorful treats for those special occasions!
Ingredients To make 12 cup cakes:
1. 4oz (125 grams) butter, softened
2. 1 tsp vanilla essence
3. 1/2 cup of icing sugar (confectionary sugar)
4. 2 eggs
5. 1 cup of plain flour
6. 2 tsp baking powder
7. 1/4 cup of milk
8. 12 paper cupcake cases (You can purchase these in various colors, patterns and sizes. For this recipe we used regular sized cases.)
Icing (frosting):
9. 4 cups of icing sugar (confectionary sugar)
10. 1 tablespoon of butter, softened
11. 4 tablespoons water
12. food coloring x3
13. sweets
14. sprinkles
Making the cupcakes:
Preheat oven to 375°F (190°C).
In a bowl place icing sugar (confectionary sugar), softened butter and vanilla essence.
Beat mixture using either an electric beater or a hand beater until the mixture is well creamed. Then add one egg at a time, making sure that each egg is well beaten in.
Fold sifted flour and baking powder into creamed mixture, then stir in milk.
Make sure mixture is completely combined.
Carefully spoon mixture into your cupcake cases. Do not overfill.
Place your 12 cases on an oven tray and bake for 15minutes at 375°F (190°C).
Cool before icing.
Making the icing (frosting):
Into a bowl sift 4 cups of icing sugar then add butter and enough water for a firm but spreadable consistency. Then divide the icing mixture into four, and place each 1/4 into a separate bowl.
Color the first lot of icing with a drop of food coloring and work the color into the icing until you are happy with the result. You may want to add extra to achieve the color you want.
Repeat with the other three lots of icing, coloring them all different colors.
Note you can mix colors together to make another color, e.g. red and blue make purple. You may want to keep one lot of icing white.
We used a piping bag to help create designs, then decorated them with sprinkles and sweets.
