Ingredients
  • 1 lb (450g) of mushrooms
  • 2 cloves of garlic
  • 1 lemon
  • 4 tablespoons of olive oil
  • 4 tablespoons of dry sherry
  • Salt and pepper

Step 1:
Finely chop the two cloves of garlic and slice the mushrooms as desired. Ideally in this recipe I like to use small mushrooms and keep them whole but as I had large mushrooms in the fridge, I sliced them into nice bite-sized quarters.

Step 2:
Heat the olive oil in a large frying pan.

Step 3:
Once the oil is hot, reduce the temperature, add the chopped garlic and cook until the garlic is a light brown.

Step 4:
Add the mushrooms and the dry sherry and cook for about 5 minutes, turning frequently.

Step 6:
Finally add the lemon juice, season to taste with salt and pepper, and give it all a final stir.

Serve hot.
