Grate the cheese and cut up the ham into small pieces and gently mix into the batter mix.

Now add the mashed sweet potato and mix in.

Using a large 11inch well greased quiche pan, place the cooked veggies from the fry pan onto the bottom then pour the batter over the top.

Cook in a pre-heated oven at 375 f or 190 c for 30 minutes.

It will puff up and turn golden brown while cooking. If you serve immediately it will still be puffy, but if you wish to serve it cold it will still look and taste fabulous but will have lost its puffiness.
