Chop the onions into small cubes and cook them gently in a large fry pan with a drizzle of oil.
Grate the potatoes and carrots and chop the cauliflower and broccoli into small pieces. Give the grated potatoes a bit of a squeeze to get rid of excess moisture.
Place all these vegetables into the fry pan with the onions, and on a gentle heat let them cook together for about 5 minutes, stirring constantly so they won't burn. Add a little salt (about a teaspoon). Set aside.
In a bowl mix together 1 cup of milk and 1 cup of self-raising flour. Mix until smooth and then add the eggs and 1 teaspoon of salt and beat in.
